I’m excited to be able to share with you my experience at the luxurious beach resort; Carlisle Bay. I definitely went for the food, but the beach, the aesthetics and especially the staff left a lasting impression on me. So what are the five must-try dishes Carlisle Bay Antigua has to offer?

Well first let me start by saying that after years of hearing about how fabulous Carlisle Bay is I finally experienced it and was in awe. I’m glad my aunt {a chef there} finally gave me the hook-up lol. Carlisle Bay is known for it’s 5-star ratings as the laid-back luxury hotel with phenomenal restaurants. The white sands and tranquil turquoise water are the perfect backdrop to the simple, yet charming Caribbean style architecture. The decor throughout is both restful and elegant.

When you first arrive at the resort, you immediately get a hint of that simple and charming style I mentioned before. As you walk towards the lobby, you cross the bridge and beneath is the beautiful koi pond. Already a sense of tranquility is invoked. The lobby is quite informal, in keeping with the laid-back vibes of the resort. There I met with the head of Guest Services; Michael, who showed me around the hotel and introduced me to a couple chefs and staff. Carlisle bay has four distinctive restaurants; Indigo on the Beach, East, Ottimo and The Jetty Grill. Carlisle Bay prides itself on using use the freshest of Caribbean ingredients to create their enticing menus. I went to both East restaurant and Indigo on the Beach.

SUSHI

To begin with I started at East, the sophisticated, yet seductive Asian restaurant, for my first dish. Known for the best Japanese, Thai and Indonesian dishes in Antigua. There in the fuchsia decorated, Asian inspired room, I met with chef Jose. He brought out a tray of California Roll, Kamikaze with sweet chili sauce, crab and fried potato, Gunkan Caviar, Sashimi and my personal favorite Spicy Tuna. To point out, I’m a sushi enthusiastic, I’ll even have it for dinner. I think it’s because of my love for rice and seafood. Sushi is the perfect combo of both. With this in mind, you know I liked every roll. I really enjoyed the Gunkan caviar, it was my second favorite of all five {5}. The seafood used were so fresh, it was like from ocean to plate. Everything was flavorful and delicious.

Next stop was Indigo on the Beach, my favorite restaurant at Carlisle Bay. Specifically for the obvious reason, it’s on the beach. Plus the shabby chic decor is more my style. Chef Anthony, the Executive Chef {interview in video below} brought out my four {4} remaining dishes; desserts! As soon as I saw all four desserts I was impressed by the presentation. The plating definitely nodded to 5-star cuisine. I had the chef’s choice; Banana Pudding with Vanilla Ice Cream, Deep fried Tempura Ice Cream, Mango Souffle and Coconut Toto.

DEEP FRIED TEMPURA ICE CREAM

Believe it or not, I’ve never had the pleasure of enjoying  fried ice cream before. I know, I know, for someone who has ice cream on the top of her dessert list, this shouldn’t be the case. As you can imagine, I was certainly excited to be able to finally have it. It was love at first bite, even though I had waited too long to get to it, it was still flavorful. The ice cream with the fresh fruits and cinnamon sugar dough was a delightful surprise.

MANGO SOUFFLE

Immediately after tasting the mango shuffle, I knew it was my favorite. It was light and airy but still had that creamy flavorful consistency expected from a soufflé. Plus the mangoes were so fresh, I couldn’t stop eating them!

BANANA PUDDING WITH VANILLA ICE CREAM

Due to the hot weather the vanilla ice cream on the banana pudding melted way too fast. Nevertheless I enjoyed the pairing of the ice cream with the flavorful banana pudding.

COCONUT TOTO

The coconut toto reminded me of Caribbean style dessert and brought me back to my childhood. My dad would make his home made version of a toto, which is a dense sweet coconut cake. For this reason I thoroughly enjoyed it.
