Ok sweeties, as promised, here is another yummy summer time recipe. These ice cream cone chocolate cupcakes will surely be a hit at any of your Summer barbecues or for a child’s birthday party! In fact you can make these for just about all of your upcoming celebrations.

I don’t know about you, but  I enjoy going to any event, be it in the backyard or a full on soiree and getting cute desserts. Your guest will be wowed by these ice cream cone cupcakes, and possibly tricked into believing it’s soft serve!

Cupcakes are definitely one of my favorite desserts, and my second favorite part of ice cream is the cone. What better way to have two absolutely delicious summer faves, than to combine them, right?

Ice Cream Cone Cupcakes

Serves 20

Chocolate Cupcake Recipe

Ingredients:

  • 1 Cup of Granulated Sugar
  • 3/4 Cup of All Purpose Flour
  • 1/3 Cup of Natural Unsweetened Cocoa Powder
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Medium Egg
  • 1/2 Cup of Whole Milk
  • 1/4 Cup of Vegetable Oil
  • 1/2 Teaspoon of Vanilla Extract
  • 1/2 Cup of Boiling Water

Directions:

Preheat oven to 350° F

Turn kettle on and bring water to a boil

In a large bowl whisk together sugar, flour, cocoa powder, baking powder, baking soda and salt.

Add eggs, milk, oil, vanilla extract.

Beat with an electric mixer on medium speed for 2 minutes.

Pour in boiling water, mix to combine.

Batter will be thin.

Fill each ice cream cone 3/4 of the way full with batter and bake for 16-20 minutes, until a toothpick comes out with bits of crumbs attached

Let cool completely on a cooling rack before decorating with frosting.

Vanilla Buttercream Recipe

Ingredients:

  • 1 Cups (2 sticks) of Unsalted Butter at room temperature
  •  1/2 Tablespoon of Vanilla Extract
  • 1/4 Teaspoon of Salt
  • 2 Tablespoons of Milk
  • 3 Cups of Confectionery Sugar (icing sugar)

Add butter to the mixing bowl of a stand mixer, fitted with the paddle attachment

Beat butter on medium speed for 3 minutes until creamy and smooth

Add vanilla extract and salt, mix until combined

Stop mixer and add half the sugar, continue mixing on low speed until combined

Add the remaining sugar, mix until combined

Scrape down bowl

Add milk, beat on medium speed until light and fluffy
