Mini No-Bake Cheesecake

Hey sweeties! Can you believe it’s almost 4th of July? Summer officially starts tomorrow, but I feel like it’s moving too fast. Given that fact, I know most of you will be celebrating with family, and what better way to do so, than with food?! I created this quick and easy mini no-bake cheesecake recipe to help with that. Plus the best part is you can make it the night before. After all we want to spend the day having fun, not cooking or baking all day.

mini no-bake cheesecakeFor the purpose of saving you time plus adding a bit of fun, I decided to make them mini size. That way you’ll have one for each guest at your next celebration. These are the no doubt perfect little desserts for the summer time. I decided to make it in jars with lids, because that way your guest can take it home, plus have a souvenir, as a reminder of the event.

I gave these sweet little treats to my family and they ALL loved it. Especially my brother who isn’t a big fan of desserts, but ate every bit of his, with extra strawberries! It was such a hit, I’ll be making it for an upcoming family event.

Mini No-Bake Cheesecake

Serves 20

Crumb Crust Ingredients:

  • 1 ½ Cups {12 whole} Graham Crackers
  • ½ Cup {1 stick} Unsalted Butter
  • ½ Cup Granulated Sugar

Cheesecake Ingredients:

  • 16 Ounces Cream Cheese
  • ⅓ Cup Sour Cream
  • 1 ½ Cup Heavy Whipping Cream
  • ⅔ Cup Granulated Sugar
  • 2 Tablespoons Fresh Lemon Juice
  • 1 Tablespoons Vanilla Extract

Directions:

  1. Crush graham crackers in food processor or with a rolling pin
  2. Add sugar and butter, mix together to make a crumb crust
  3. Pack 3 tablespoons of crumb crust in mini jars
  4. Place jars with crumb crust in freezer for about 10 minutes
  5. Add cream cheese, vanilla extract, fresh lemon juice and sugar to mixing bowl {hand mixer can be used}
  6. Mix for about 3 minutes or until mixture becomes fluffy, set aside
  7. In another clean cold mixing bowl, add heavy cream and whip for 3-5 minutes for stiff peak
  8. Fold whip cream and sour cream into cream cheese mixture
  9. Remove jars from freezer, add mixture to crumb crust in jars
  10. Freeze for 30 minutes or more
  11. Garnish with freshly cut strawberries and serve

Voila you’ve just made a mini no-bake cheesecake with strawberries for your guest to indulge in!
